AccuTemp AccuSteam Griddle Operating Instructions
AccuTemp AccuSteam griddles utilize breakthrough technology to ensure consistent cooking results. To maximize your equipment’s performance, it’s important to follow best practices. If you’re looking for guidance, these AccuTemp AccuSteam griddle operating instructions will help you use your unit properly and efficiently.
These directions are for EGF series electric and GGF series gas models, such as EGF2403A2450-T1 digital and GGF1201A4800 analog units.
Preheating the Unit
Be sure to condition the cooking surface with oil before using the unit for the first time. If needed, refer to our AccuTemp Griddle seasoning guide for detailed instructions.
- Step 1. Turn on the machine - Set the On/Off switch to the “On” position. On digital units, the standard setpoint temperature of 350°F (176.7°C) will flash on the display briefly, followed by the current surface temperature as the machine heats to the default factory setting.
- Step 2. Adjust the temperature - Rotate the temperature knob on analog models to the desired setting. For digital models, press and hold the up arrow button until all three lights on the control panel start flashing. Then, use the up and down arrow keys to select the desired temperature. Wait approximately 5 seconds for the unit to lock in the new setting.
- Step 3. Choose a setpoint (digital models only) - Pick a preset temperature by pressing and holding either the Preset Temp 1 (375°F/190.6°C) or Preset Temp 2 (400°F/204.4°C) button until the light above the key flashes, then release.
- Step 4. Allow the griddle to heat - Let the cooking surface reach the desired temperature. Once the heat light starts cycling on and off, the unit has reached temperature. Note that screens on digital griddles will show the temperature increasing during preheating and then display “rdY” when the set point is reached.
Using the Griddle
Be careful when operating the unit since the hot cooking surface may cause severe burns.
- Step 1. Grease the surface - Coat the cooking surface with high-temperature cooking oil.
- Step 2. Place food on the griddle - Put food product on the cooking surface in a single layer. Since AccuSteam griddles use sealed steam chamber heating, there are no hot or cold spots, so you can place food product all the way up to the edge.
- Step 3. Cook the food - Prepare food items according to the recipe, using a spatula to flip them as needed.
- Step 4. Scrape off excess grease - Use a spatula or scraper to push fatty residues towards the grease trough as needed during cooking.
- Step 5. Remove cooked items - Transfer cooked food items to serving plates or holding pans.
Finishing Use
Take the following steps once you’re done using the unit for the day.
- Step 1. Power down the machine - Turn the On/Off switch to the “Off” position. On gas models, turn off the main gas supply as well.
- Step 2. Clean the unit - Follow the directions in our AccuTemp AccuSteam griddle cleaning guide to remove grease deposits.
- Step 3. Shut down the machine (if needed) - Use the AccuTemp AccuSteam griddle shutdown procedure to prepare the unit for an extended period of non-use.
