The Blodgett Invoq oven is designed for commercial kitchens that demand precision, versatility and efficiency. With many advanced features, this oven makes it easy to prepare a wide range of dishes. Whether you’re roasting, steaming or combining both for delicious results, this step-by-step guide will show you exactly how to use your Blodgett Invoq oven.

Using Convection Mode

Convection mode is ideal for roasting, baking and general cooking. Here’s how to set it up:

  • Step 1—Press “Manual” on the home screen.
  • Step 2—Tap “Convection” to enter “Manual” mode. The oven will preheat using the last settings.
  • Step 3—Set the temperature by pressing the display and dragging your finger up or down.
  • Step 4—Tap the Timer icon and drag up or down to set hours and minutes.
    • NOTE—For continuous operation, press “More” and select “Continuous Time.” To use “RackTimer,” select it from the same menu.
  • Step 5—Press the Fan icon and choose your desired fan speed.
  • Step 6—Tap the “Exhaust” icon to toggle between “Open” and “Closed.”
  • Step 7—Press the “Steam Injection” icon and select the injection time.
  • Step 8—Once all settings are correct, start the cooking cycle.

Using the Steaming Function

Steam mode is perfect for vegetables, seafood and delicate items.

  • Step 1—Press “Manual” on the home screen.
  • Step 2—Tap the “Steam” icon.
  • Step 3—Set the desired temperature.
  • Step 4—Adjust the timer or select “Core Probe” mode for precise cooking.
  • Step 5—Set the fan speed as needed.

Using the Combi Function

Combi mode combines steam and convection for faster, even cooking.

  • Step 1—Press “Manual” on the home screen.
  • Step 2—Tap the “Combi” icon.
  • Step 3—For “CombiSense,” press “More” and select “CombiSense.”
  • Step 4—Set the temperature.
  • Step 5—Tap the Timer icon and set the time.
    • NOTE—You can use the “More” button to switch between “Timer,” “Continuous Time” or “RackTimer.”
  • Step 6—Press the “Core Probe” icon to start in “Normal” mode.
    • NOTE—You can change the probe mode to Normal, Delta-T, or Cook & Hold under the “More” menu.
  • Step 7—For CombiSpeed, press “More” then select “CombiSpeed.”
  • Step 8—Set the temperature for “CombiSpeed.”
    • NOTE—Do not load food until the oven reaches the set temperature.
  • Step 9—Press the “Fan” icon and select the desired fan speed.

Using the Recipes Menu

The Recipes menu makes cooking even easier with pre-programmed settings.

  • Step 1—Press “Recipes” on the home screen.
  • Step 2—Scroll and select the desired recipe to view details.
  • Step 3—Press “Start” to begin the cooking program.
